No Bake Berry Cheesecake


Cheesecake is my favourite dessert but I hate waiting for it to cook and then cool. That is not fun! I found this great no bake cheesecake recipe on Pinterest,  and it tastes just as good as a baked one. It is smooth, creamy, rich and sweet. In other words, it is everything you want in a cheesecake. You can make it blueberry or any type of berry you have on hand. This recipe uses pre-made pie filling, but I made my own topping with sugar, flour and fresh berries.

No Bake Berry Cheesecake

Ingredients
  1. 8 oz. cream cheese, softened
  2. 1 cup confectioners sugar
  3. 1 tsp. vanilla
  4. 8 oz. cool whip, thawed
  5. 10 oz. blueberry pie filling
For the Crust
  1. 3 cups nilla wafer cookies
  2. 6 tablespoons butter, melted
Instructions
  1. 1. To make the crust, preheat the oven to 350 degrees. In a food processor, process the cookies into fine crumbs . Combine the cookie crumbs and melted butter in a small bowl and mix until all the crumbs are moistened. Transfer the crumbs to a pie plate. Press the crumbs  into the bottom and up the sides of the pie plate.
  2. 2. Bake until it is beginning to brown, about 10 minutes. Transfer to a wire rack and cool completely while making the filling.
For the filling
  1. 1. beat together the cream cheese, sugar and vanilla. Fold in the cool whip - make sure it is thoroughly combined.
  2. 2. Spoon filling into prepared pie crust. Spread blueberry topping on top of filling. Refrigerate for 2 hours or until chilled.
