Antipasto is a typical Italian appetizer which is made of various yummy ingredients, such as cured meats, fresh cheeses, and herbs. Antipasto actually means “before the meal”. These Antipasto Bites are a finger food twist on a traditional antipasto appetizer platter. They are perfect for grabbing due to the sturdy TRISCUIT cracker base and could be either an appetizer or an anytime snack. Let’s call them an Antipastriscuit! 🙂
If you ate antipasto and pasta, would you still be hungry?
- TRISCUIT crackers
- Marinated olives
- Marinated roasted bell peppers
- Pesto sauce
- Bocconcini, sliced
- Spread some pesto sauce on top of the cracker.
- Layer on the bocconcini (sliced or halved), a piece of roasted bell pepper and an olive.
- Eat immediately.
- Other possible toppings could include another soft cheese, marinated artichokes, salami or prosciutto.
I think I can safely say that I have been eating (and enjoying) TRISCUIT crackers my whole life. I can’t remember when they haven’t been a staple in my pantry. Whether eaten just plain Jane or with a topping, they are delish. What is your favourite variety of TRISCUIT cracker?
