So are these actually grilled gorgonzola buffalo burgers or bison burgers? Well, although the terms are often used interchangeably they aren’t the same animal.
Bison are found in North America and some parts of Europe while buffalo are native to Asia and Africa. Buffalo are bigger than bison and have longer horns. Either one makes a great patty to serve in a pretzel bun!
Along with the meat you’re going to need onion, cheese, breadcrumbs, egg, mustard, seasonings, and pretzel buns. Feel free to change up the seasonings if you want or even make these using ground beef if you prefer or if you can’t find the other type of meat.
How to Make Juicy Bison Burgers
These patties are easy to prepare because you just need to combine the patty ingredients in a bowl. You will get 8 grilled buffalo burger patties in total.
The simplest way to get even-sized ones is to divide the mixture in half then again to get 4 equal portions, then divide each of those in half so you end up with a total of 8 patties. You can also use a ¼-cup size measuring scoop.
The grilled gorgonzola buffalo burgers will take about 5 minutes per side to cook through although how thick they are can determine the exact timing. Toast the buns, add the grilled buffalo burger and toppings and enjoy.
How Do You Know When They’re Done?
You won’t want to overcook these grilled gorgonzola buffalo burgers so how do you know when they’re done? Giving them about 5 minutes per side is a good guideline but some people prefer to cook them for a couple minutes more.
Use a meat thermometer for the most accurate result though. 140 degrees F in the thickest part is medium while 160 degrees F would be well done. I prefer them medium or even medium-rare which would be 135 degrees F in the middle. Buffalo (or bison!) is a lean meat so it can dry out if overdone.
Which Cheese to Choose
You can use blue cheese or gorgonzola in these grilled gorgonzola buffalo burgers, as you prefer. If you really aren’t keen on blue cheese you can use something like cheddar instead.
Gorgonzola seems to complement the grilled buffalo burger especially well since its tangy creaminess offers a great contrast with the rich-tasting meat.
I love the salty, earthy flavour of gorgonzola. You can get this type of cheese young or aged. Young gorgonzola is soft and creamy while the vintage versions can be firm and a bit crumbly. If you have another favourite blue cheese, you could try roquefort, Stilton, Danish blue, or Cabrales.

This type of bun has a thin, chewy crust and is fluffy and soft inside. Pretzel buns are the bun version of soft pretzels. They typically have a sprinkling of salt on top. Since the blue cheese or gorgonzola is also salty, you shouldn’t add too much salt to the patty mixture.

Grilled Gorgonzola Buffalo Burgers in a Pretzel Bun
Ingredients
- 2 Pounds ground buffalo , or bison
- red onion, diced
- 6 Ounces gorgonzola cheese, Shredded
- 1/2 Cup bread crumbs
- 1 egg
- 1/2 Teaspoon black pepper, coarse
- 1 Teaspoon salt, coarse
- 1/4 Teaspoon red pepper flakes
- 1 Teaspoon dried garlic , granulated
- 1 Teaspoon dill weed
- 1 Tablespoon mustard, stone ground
For serving
- 8 hamburger buns , pretzel
- Butter lettuce
Instructions
- Preheat the grill or smoker to 400 degrees F for 15 minutes.
- Combine all burger ingredients in a large mixing bowl and mix thoroughly.
- Scoop out ¼ cup of meat mixture and form burger patties.
- Place patties directly onto the grill grates and cook for five minutes per side.
- During the final two minutes of cooking time place pretzel buns cut side down onto the grill grates to lightly toast
- Prepare burgers. Add desired toppings and serve.
