A versatile snack: These tasty bites are great for breakfast, brunch, as appetizers, or even as a flavorful little snack when you want something savory.
Delicious flavors: Ham and cheese are a classic pairing but when you add broccoli into the mix too, you get something truly mouthwatering.

Ham and Cheese Crescent Cups Ingredients
A complete list of ingredients and amounts can be found in the recipe card below.
Crescent rolls: A package of crescent rolls dough makes this recipe quick and easy.
Ham: Use leftover ham if you have it.
Cheddar cheese: I recommend shredding your own from a block of cheese. It melts better than the pre-shredded kind.
Broccoli: Adds color, flavor and nutrients.
Chives: An optional garnish.
How to Make Ham and Cheese Crescent Rolls
For more detailed instructions with weights and measurements, jump to the printable recipe card.
Prepare the ingredients: Chop the broccoli and ham and mix in the cheese. It’s best to chop the pieces quite small rather than having big chunks. Next, you can unroll the crescent rolls into triangles.
Assemble them: Put the crescent rolls into a greased muffin tin and then divide the ham mixture between them. Roll the crescent rolls up then grind some salt and pepper on top.
Bake and garnish: Bake the crescent roll breakfast cups until golden then serve, garnished with fresh chives if liked.
Substitutions and Variations
Cheddar cheese: I like to use cheddar but you can use any kind of cheese you prefer. Muenster, Swiss cheese, pepper jack, and Mexican blend are just a few examples.
Ham: You could substitute cooked chicken, turkey or bacon, or pair two different meats. Another idea is using pepperoni and maybe adding some sliced tomatoes for an Italian flavor.
Vegetarian version: Substitute sliced mushrooms, bell peppers or green onions for the ham.
Broccoli: Swap for cauliflower, spinach or kale.
Gluten-free option: You can use gluten-free crescent roll dough mix.
Serving Suggestions
With a dipping sauce: Enjoy them as they are or pair them with a dipping sauce like Dijon mustard, spicy mayo or BBQ sauce.
With brunch: Having them for brunch? Maybe add breakfast tacos with breakfast fries or this breakfast skillet.
With a picnic: This crescent roll recipe is portable too, so consider them for a picnic or potluck gathering, perhaps along with Italian picnic sandwiches and Cajun shrimp deviled eggs.
How to Store Breakfast Crescent Cups
Store: Keep leftovers in the refrigerator in a Ziploc bag for 2 or 3 days.
Freeze: Freeze them in a freezer-safe container or Ziploc bag for up to 3 months.
Thaw: Thaw overnight in the refrigerator.
Reheat: You can reheat them in the microwave or in the oven or air fryer.
Top Tips
Shred your own cheese: Because pre-shredded cheese contains starch or other ingredients to keep the shreds from sticking to each other, it’s best to shred your own from a block. It will melt better and taste better too.
Chopping your ingredients: You can chop the ham and broccoli roughly, into bite-sized pieces. Evenly sized pieces will cook evenly.
Check for doneness: Once the dough is golden brown, these are done. The ham is already cooked, the cheese just has to melt and the broccoli doesn’t take long to cook through.
Crescent Roll Breakfast Cups FAQs
Yes but don’t serve them straight from the oven – the cheese filling gets molten hot! Let them sit for at least 15 minutes before serving. They’re also good served chilled or at room temperature.
You can use any brand you prefer for making leftover ham, broccoli and cheese crescent cups. Pillsbury is very popular and Aldi also offers an own-brand crescent roll which is especially flaky and delicious. But if you have another favorite, go ahead and use that. I often keep a tube or two of crescent roll dough in the refrigerator to make little treats like these or even pumpkin bites.
