How to Make Ham Steaks on a Sheet Pan

Cook the potatoes: Toss the potatoes with olive oil, garlic, rosemary, salt and pepper, and bake on a greased sheet pan for 20 minutes.
Make the Dijon mustard sauce: Whisk the mustard with the honey, vinegar, rosemary, and garlic in a small bowl.
Add the ham steaks to the prepared baking sheet: Push the potatoes over and overlap the ham steaks on the sheet pan, before brushing the honey mustard sauce on top.
Add the green beans, and continue to cook: Gently toss the green beans with olive oil, salt and pepper, and add those to the sheet pan next to the ham steaks. Cook until tender and serve immediately while still hot.

Substitutions and Variations

Swap the green beans for another vegetable if you prefer. You might also like to add a pinch of onion powder or fresh minced garlic in place of the garlic powder to the sauce you brush on to the ham.

Ingredients 

FOR THE ROSEMARY POTATOES

  • 1 ½ Pounds potatoes, baby yellow, sliced in half
  • 2 Tablespoons olive oil
  • ½ Teaspoon Kosher salt
  • ½ Teaspoon black pepper, freshly cracked
  • 1 Clove garlic, minced
  • 1 Tablespoon fresh rosemary, chopped

FOR THE HAM

  • ¼ Cup honey
  • 3 Tablespoons whole grain mustard
  • 1 Teaspoon apple cider vinegar
  • ½ teaspoon fresh rosemary, chopped
  • 1 Teaspoon garlic powder
  • 16 Ounces ham steaks, about 6-7 ham steaks

FOR THE GREEN BEANS

  • 1 Pound green beans, trimmed
  • 1 Tablespoon olive oil
  • ¼ Teaspoon Kosher salt, plus more to taste
  • ¼ Teaspoon black pepper, freshly cracked, plus more to taste

Instructions 

  • Preheat oven to 400 degrees F. Grease a large-rimmed sheet pan with nonstick cooking spray.
  • In a medium bowl, add the potatoes, olive oil, salt, pepper, minced garlic, and rosemary. Toss to coat everything together.
  • Place the potatoes cut side down on the sheet pan. Bake in preheated oven for 20 minutes.
  • In a small bowl, whisk together the honey, wholegrain mustard, apple cider vinegar, rosemary, and garlic powder.
  • Remove the sheet pan from the oven and move the potatoes to one side of the pan. Place the ham steaks slightly overlapping on one side of the baking sheet. Brush evenly with the honey mustard sauce.
  • Place green beans on the sheet pan. Add olive oil, salt and pepper. Gently toss to combine.
  • Place into oven and bake for 20 to 25 minutes.
  • Garnish with chopped fresh parsley if desired.

    This is a brilliant recipe for making on those busy weeknights and I have a lot of those. I made this once as it is and the second time using sweet potatoes instead of the baby ones, and both ways are really good.
