Smoked sausage: I like to use skinless sausage but you can use any kind of smoked sausage you want. Turkey sausage works if you prefer that or your favorite kind of Italian sausage.
Baby potatoes: Either red or white baby potatoes will work in this hearty meal.
Red bell peppers: You can use green, orange or yellow if you prefer.
Chicken broth: Vegetable broth would work in its place, or even mushroom broth.
Garlic: Use fresh garlic or minced garlic from a tube or jar. If you don’t have any of that, a pinch of garlic powder will work.
Grated parmesan: For a garnish and to add a contrasting flavor.

How to Make This Sausage Potato Skillet

Cook the potatoes: Add potatoes to hot olive oil in a large skillet and add salt and pepper. Let the potatoes cook for about 5 minutes before stirring. Cook for another 5 minutes and stir again.
Add the vegetables: Add the onions and cook for 5 minutes, then add the bell peppers and garlic and cook for 1 minute.
Add the sausage: Add the sausage and Italian seasoning and cook for 2 to 3 minutes, stirring occasionally.

Yes, certainly, swap the smoked sausage for extra-firm tofu or for extra veggies. Throw in some canned beans for protein if you’re using the extra veggies option.

What’s a good alternative to Italian seasoning?

Not got that ingredient? Don’t worry. Simply add a pinch each of dried oregano, parsley and basil (and maybe a little pinch of thyme and/or rosemary if you have it).

Can you use leftover potatoes to make this?

If you have leftover fried potatoes, you can use those in this sausage potatoes recipe. They’ll only need warming through so add them when you add the sausage to the skillet meal.

Can you use tater tots or hash browns instead of baby potatoes?

Yes you can but keep in mind these cook faster, so follow the directions on the packaging.

Smoked Sausage and Potato Skillet

Ingredients 

  • 4 to 6 Tablespoons olive oil
  • Pounds baby potatoes, small, quartered
  • ½ Teaspoon salt
  • ½ Teaspoon black pepper
  • 1 onion, diced
  • 1 red bell pepper, sliced
  • ½ Teaspoon garlic, minced
  • 1 Package smoked sausage
  • 2 Teaspoons Italian seasoning
  • ¼ Cup chicken broth
  • 2 Tablespoons parmesan, grated
  • 1 Teaspoon parsley, freshly minced

Instructions 

  • Heat the olive oil in a large sauté pan or skillet.
  • Add the potatoes and season with salt and pepper. Cook over medium heat for 5 minutes before stirring. Continue cooking for 5 minutes, then stir again.
  • Add the onions and continue cooking for another 5 minutes. Add a little more oil if necessary.
  • Add the bell pepper and garlic and cook for 1 minute.
  • Add the sausage and season with Italian seasoning. Cook for 2 to 3 minutes.
  • Pour in the chicken broth and cook over medium low for 5 minutes.
  • Remove from the heat and serve garnished with parmesan and parsley.
