No Bake Granola Bars

Homemade no bake granola bars are great for any occasion, from breakfast or brunch to a post-workout or after-school snack. They're sweet, chewy and so tasty!

Ingredients

  • 2 1/2 Cups granola I used Dorset Cereal
  • 1/2 Cup dried cranberries
  • 1/2 Cup maple syrup
  • 2 Tablespoons avocado oil
  • 3/4 to 1 Cup peanut butter
  • 1 Teaspoon vanilla extract

Chocolate Topping

  • 1 Cup chocolate melted, about 4 squares
  • 1/2 Cup pecans chopped
  • 3 Tablespoons avocado oil

Instructions

  • Line an 8-inch cake pan with parchment paper. You can also use a 9-inch one but the bars will come out thinner. Set aside.
  • Combine the granola and cranberries in a mixing bowl.
  • Add the avocado oil and maple syrup. Mix well to coat.
  • Add the peanut butter, mixing well. The mixture will be thick and sticky.
  • Transfer the mixture into the prepared pan, pressing down with a fork.
  • Melt the chocolate and avocado oil in a pan on the stove or in the microwave, stirring frequently, until smooth.
  • Pour this over the bars.
  • Sprinkle the chopped pecans evenly on top but don't mix in.
  • Freeze for at least an hour or refrigerate overnight.
  • Cut the bars to the desired size and serve.

Notes

Watch the measurements: Although you don't have to be super-precise with these granola bars, it's best to measure out the granola accurately. Using too much means the bars will be crumbly and not using enough means they will be gooey.
Give them sufficient chilling time: It's important to give these a minimum of one hour in the freezer to get them to set and hold together.
Have fun experimenting: You can use any kind of granola, any kind of chocolate, any dried fruit and nuts, to personalize your granola bars and make them unique!
