Bisquick Lemon Blueberry Cobbler

This cozy lemon blueberry cobbler using Bisquick is a dreamy combination of tangy berries and lemony goodness, all trapped in a light buttery cobbler.

Ingredients

  • 6 Tablespoons salted butter melted
  • 2 Cups blueberries fresh
  • ½ Cup granulated sugar
  • 3/4 Cup milk
  • 1 Tablespoon lemon juice
  • ½ Tablespoon lemon zest
  • Cups Bisquick

Instructions

  • Preheat the oven to 350 degrees F.
  • Place the 8" cast iron in the oven while preheating so it can get nice and hot.
  • In a mixing bowl, add the blueberries, 2 tablespoons of granulated sugar, lemon juice, and lemon zest. Mix well.
  • In a separate bowl, mix the Bisquick, the remaining granulated sugar, and the milk. Mix until you have a batter.
  • Pour the melted butter into the hot cast iron skillet.
  • Pour the Bisquick batter over the butter. DON’T MIX
  • Sprinkle the blueberries. DON’T MIX.
  • Cook in the preheated oven for 38 to 40 minutes or until the top is golden.

Notes

Quick butter melt tip: You can melt the butter in the microwave or simply put it in the skillet in the oven for 4 to 5 minutes, not more than that, so you don’t burn the butter.
Let it rest before serving: After baking, allow the cobbler to cool for at least 15 to 20 minutes to let the flavors meld and the filling set slightly.
Balance sweetness and tartness: Adjust the amount of sugar and lemon juice/zest to achieve the right balance of sweetness and tartness according to your taste preferences and the sweetness of your berries.
Prevent soggy bottoms: Mix the blueberries with a thickening agent like cornstarch or flour to avoid a soggy bottom crust. This helps absorb excess liquid from the berries during baking.
