You will love these pink lemon bars. These strawberry lemonade bars are super easy to make and taste so good. It will be very hard to just eat one of these strawberry squares! Pink lemonade squares are a great summer lemon and strawberry dessert.
Preheat oven to 350 degrees F. Grease a 9x13 baking dish or prepare with parchment paper.
Crust:
With an electric mixer, mix flour, butter and sugar.
Press into bottom of baking dish. Bake 15 to 20 minutes until edges are golden brown.
Filling:
While the crust is baking, make filling by blending lemon juice, lemon zest, sugar and strawberries until smooth.
Add flour, baking powder, and eggs to the strawberry puree. Blend until all ingredients are incorporated and smooth.
Once crust is done, pour egg mixture onto it. Bake an additional 15 to 20 minutes. Allow to cool before cutting. Sprinkle with icing sugar (optional) once cooled.
Notes
If you don’t like a tart lemon square you can cut back to half a cup of lemon juice.
