Ingredients

  • 2 Pounds chuck roast
  • 1 Tbsp. vegetable oil
  • 1/2 Cup butter
  • 1 Tsp garlic
  • 6 onions peeled
  • 4 carrots peeled and cut into 1 inch pieces
  • 1 Tbsp. flour
  • 1 Cup red wine or white if that is all you have
  • 2 Cup beef broth
  • 2 thyme sprigs
  • 1 sprig rosemary
  • 2 bay leaves
  • 2 Pounds potatoes peeled and cut into ¼ inch slices

Instructions

  • Preheat oven to 325°.
  • In a large oven safe pan, brown the meat with the oil.  Don’t crowd the pan.  This will need to be done in several batches.
  • After the meat has browned, remove from the pan and add a little slice of butter, the onions and carrots and cook for 1 minute.
  • Add the garlic and the flour and stir to combine, then add the red wine and stir well
  • Add the meat and all the spices and stir.  Add the broth, then lay the potato slices around the top. Place the butter slices on the potatoes.
  • Put the lid on the pot and place in the oven.  Cook for one hour.
  • Remove the lid and turn the oven to 400°.  Cook for an additional 30 minutes.
  • Turn on the broiler to 500° and place the pan under the broiler for 3 to 5 minutes, until potatoes have a nice browned look.
