Brussels sprout slaw is a great coleslaw alternative. You make this shaved Brussels sprouts salad with lemon apple cider vinaigrette with cabbage and sprouts. This summer salad recipe is a great BBQ side and this Brussels sprouts salad recipe is always a hit.

Ingredients

  • 1 lb. Brussels sprouts shredded
  • 8 Oz. cabbage shredded or 1 bag prepared
  • 1/4 Cup cilantro roughly chopped
  • 1/4 Cup mint roughly chopped
  • 1/2 Cup pistachios shelled

For the dressing 

  • 1/4 Cup apple cider vinegar
  • 3 Tbsp. olive oil
  • 1 Tbsp. sugar
  • 1/2 Tsp. coriander  ground
  • 1 Juiced lime 
  • Salt and pepper  to taste

Instructions

  • In a large bowl combine shredded Brussels sprouts, cabbage, cilantro, mint, and pistachios.
  • In a small bowl whisk together apple cider vinegar, olive oil, sugar, coriander, and lime juice. Add salt and pepper to taste.  
  • Toss Brussels sprout mixture with dressing until fully combined. Refrigerate until ready to serve.  
  • Give slaw a toss before serving.
