Shaved Brussels Sprout Slaw

This shaved Brussels sprout slaw is crisp, tangy and packed with fresh herbs and crunchy pistachios. It’s a fast and easy side that works with almost any meal. The light vinaigrette keeps it bright and refreshing.

Ingredients

  • 1 Pound Brussels sprouts shredded
  • 8 Ounces cabbage shredded or 1 bag prepared
  • ¼ Cup cilantro roughly chopped
  • ¼ Cup mint roughly chopped
  • ½ Cup pistachios shelled

For the Dressing 

Instructions

  • In a large bowl combine shredded Brussels sprouts, cabbage, cilantro, mint, and pistachios.
  • In a small bowl whisk together apple cider vinegar, olive oil, sugar, coriander, and lime juice. Add salt and pepper to taste.  
  • Toss Brussels sprout mixture with dressing until fully combined. Refrigerate until ready to serve.  
  • Give slaw a final toss before serving.

Notes

Use a mandoline or food processor: It makes shaving sprouts fast and easy.
Toast the pistachios: Adds more flavor and crunch to the slaw.
Let it sit: Chilling for 15 to 30 minutes before serving lets the flavors blend.
