Ingredients

  • 1/2 Cup coconut oil
  • 1/2 Cup maple syrup
  • 2 Tsp. vanilla extract
  • 1 Tsp. cinnamon
  • 3 Cup old fashioned rolled oats use certified gluten free oats for gluten free granola
  • 1 Cup pecans
  • 1/2 Cup almonds
  • 1/2 Cup coconut shredded
  • 1/2 Cup coconut flaked
  • 1/4 Cup pumpkin seeds

Instructions

  • Pre-heat oven to 350 degrees F. Prepare a baking tray with parchment paper. 
  • Place melted coconut oil, maple syrup, vanilla extract and cinnamon in a large bowl. Whisk to combine. 
  • Add rolled oats and stir until oats are well coated. 
  • Add crushed pecan nuts, crushed almonds, shredded coconut, flaked coconut and pumpkin seeds. Stir to combine. 
  •  Place granola in the prepared baking tray and extend it evenly. 
  • Bake it for 20 to 25 minutes or until granola is golden brown and crunchy. 
  • Store it in a jar with a lid for up to two weeks.
