Air Fryer Apricot Apple Cinnamon Dumplings

- 4 apples granny smith
- 3 apricots
- 1 Tbsp. almond paste
- 1 Tbsp. brown sugar
- 1 Cup caramel sauce
- 2 Sheets puff pastry dough
- 4 Tbsp. unsalted butter
- 2 Tsp. cinnamon divided
Preheat the air fryer to 325 degrees F.
Lightly flour a wooden cutting board. Unroll pastry dough sheets. Cut each sheet into 4 equal sections. Roll each section into a ball, then place back onto the cutting board. One by one use a rolling pin to roll out the dough into a thin flat circle about 6” in diameter.
Peel and core the apples. Cut into small pieces. Repeat with apricots.
Heat a small saucepan over medium heat. Add butter, almond paste, and brown sugar to the pan. Break apart the almond paste as the butter melts and whisk to combine. Cook for 2 minutes, then add 1 Tsp. cinnamon and caramel sauce. Whisk until smooth and cook for 1 minute.
Add apples and apricots to a large mixing bowl. Stir in the buttered caramel until thoroughly coated.
Place a scoop of apple mixture into the center of each dough round. Fold the pastry up and over the center to cover. Pinch seams to seal.
Arrange dumplings in a single layer in the air fryer basket. Spray lightly with non-stick cooking spray and sprinkle with cinnamon. Cook for 22 minutes.
Allow to cool for 5 minutes before serving.
