Air Fryer Bacon Loaded Cornbread Pudding
Bacon loaded cornbread pudding pairs with everything. It’s the best corn casserole I’ve made. It’s easy to put together this air fryer cornbread pudding made with Jiffy cornbread mix. This bacon corn casserole will become a family dinner tradition.

- 1/2 lb bacon Thick cut
- 3 Cloves garlic minced
- 2 Ears corn
- 1 Package cornbread mix 8.5 Oz.
- 1 Tsp. garlic powder
- 1 Tsp. salt kosher
- 1 Tsp. black pepper
- 1/2 Cup white onion diced
- 1/4 Cup chives divided
- 2 eggs
- 1 Cup french onion dip
- 1/2 Cup half and half
- 1/4 Cup unsalted butter melted
- 1/2 Cup goat cheese crumbled
Preheat the air fryer to 325 degrees F.
Heat a skillet over medium high heat. Cook bacon and remove from the skillet. Crumble the bacon. Keep the bacon grease in the skillet.
Add minced garlic and cook in the bacon grease for 30 seconds. Cut corn from the cob and add to the skillet. Saute for 4 minutes and remove from heat.
In a large mixing bowl, combine cornbread mix, garlic powder, salt, pepper, corn, crumbled bacon, diced onion, and half the chives. Stir using a wooden spoon. Next, stir in the whisked eggs, french onion dip, half and half, and melted butter until smooth
Pour into an oven safe casserole dish small enough to fit into your air fryer. We used an instant pot vortex and an 8” dish worked perfectly for us.
Place the casserole into the air fryer and cook for 24 minutes.
Garnish with crumbled goat cheese and remaining chopped chives.
