Air Fryer Breakfast Bundt Bake

Air fryer breakfast Bundt bake is loaded up with cheese, veggies, eggs, bacon, and more for a cozy and hearty breakfast or brunch. It's perfect for an Easter or Christmas brunch.

Ingredients

  • 5 bagels everything flavor, cut into 1-inch cubes 
  • 1/2 Cup bacon cooked and chopped
  • 12 sausages cooked, I used breakfast links
  • 2 Tablespoon butter 
  • 1/2 Cup spinach 
  • 1 Cup canned tomatoes with green chilies, drained
  • 1/2 Cup Colby cheese  shredded
  • 1/2 Cup Gruyere cheese shredded
  • 6 eggs
  • 1/2 Cup milk
  • 1 Tablespoon everything bagel seasoning

Instructions

  • Preheat the air fryer to 390 degrees F. 
  • Cut the bagel into bite sized pieces. Cook and chop the bacon. Cut cooked sausage links into ¼-inch pieces.
  • Spray an 8-inch Bundt pan with nonstick cooking spray. Layer half the ingredients into the Bundt pan starting with the bagels, then add sausage, bacon, spinach, tomatoes, and cheese. Repeat with the remaining half. Save 6 to 7 pieces of bagel for use after the next step and also save a small amount of cheese to sprinkle onto the top of the casserole after cooking.
  • In a large mixing bowl, combine the eggs and milk. Whisk until smooth. Pour this into the bundt pan. Add the 6 to 7 pieces of bagel and pour melted butter over the top. Cover with foil.  
  • Place the bundt pan into the air fryer and cook for 20 minutes. Remove the foil, and cook for 2 more minutes. Remove the bundt pan from the air fryer and let it cool for 5 minutes.
  • Place your serving plate over the top of the bundt pan. Hold the plate securely to the pan and flip it upside down and onto the plate. The casserole should slide out onto the plate. If it is stubborn, tap the sides of the bundt pan with a spatula, and gently trace along the edges to release. 
  • Sprinkle cheese and everything bagel seasoning over the top and cut into slices.

Notes

No Bundt pan? If you don't have an 8-inch Bundt pan, just use a regular baking dish.
Shred you own cheese: Shredding your own cheese means it melts better. Pre-shredded cheese has starches added to stop it clumping together but this affects the flavor and how it melts.
Easy release: If you have trouble getting it out of the pan, tap the pan sides with a spatula and run it around the edges until the breakfast bake is dislodged.
