Bacon Wrapped Green Beans

Bacon wrapped green beans bring a perfect mix of savory and sweet to the table. This easy side dish combines crispy bacon, tender beans and a maple-butter glaze for a mouthwatering bite.

  • Preheat oven to 350 degrees F.
  • Place bacon onto a baking sheet in a single layer.
  • Bake the bacon at 350 degrees F for 15 minutes or until almost cooked, but not yet crispy. 
  • Take bacon out of the oven and set aside. 
  • While the bacon is cooking, season a large pot of water generously with salt and bring the water to a boil. 
  • Add the green beans. Cook the beans for about 5 minutes until they're almost tender. 
  • Remove the green beans from the boiling water and immediately plunge them into a bowl of ice water to stop the cooking process. 
  • Melt together the butter, maple syrup, salt, pepper, garlic powder, onion powder, rosemary, and red pepper flakes in a small bowl using the microwave, or in a small saucepan on the stove.
  • Gently dry the green beans off with a paper towel, or lint free clean kitchen towel. 
  • Pour the melted butter mixture over the green beans and toss to coat. 
  • Squeeze the ½ lemon over the top of the green beans and toss to coat. 
  • Increase the oven heat to 450 degrees F. 
  • Take a small bundle of green beans, maybe 8 to 10 at a time and wrap the center of the bundle with a strip of the bacon. You can secure the end with a toothpick. 
  • Place the bundle onto a baking sheet. 
  • Once you have wrapped all of the green beans, drizzle any leftover butter mixture from the green bean bowl over the top of the bundles. 
  • Bake the green beans for 15 minutes or until the bacon and green beans have a nice roasted color. 

Notes

Partially cook the bacon: This helps it get crispy without overcooking the green beans.
Blanch properly: Shocking the beans in ice water keeps them crisp and vibrant.
Dry the beans well: Removing moisture helps the glaze stick and prevents sogginess.
Use toothpicks: They help hold the bundles in place and make serving easier.
