Air Fryer Polenta Fries

These air fryer polenta fries are a creative and flavor-packed alternative to traditional potato fries. The combination of crispy edges, creamy centers and bold truffle notes makes them hard to resist. Whether you're serving them as an appetizer or side, they're sure to steal the show.

Ingredients

  • 1 Cup polenta quick cook
  • 3 Cups chicken stock
  • 2 Teaspoons garlic minced
  • ¼ Cup salted butter
  • 4 Ounces mozzarella
  • 2 Teaspoons truffle salt
  • ¼ Teaspoon black pepper
  • 1 Tablespoon parsley Italian, freshly minced
  • 1 Teaspoon sea salt flakes
  • 4 Ounces parmesan cheese block
  • 1 ½ Tablespoons truffle oil

For the Truffle Mayo

Instructions

  • Add chicken stock and minced garlic to a medium saucepan over medium high heat and bring to a boil.
  • Once boiling, add the butter. Lower to a simmer and stir in the polenta, grated mozzarella, truffle salt, and pepper. Simmer for 5 minutes, or until thickened.
  • Line a 10 x 8-inch baking sheet with parchment paper. Pour polenta into the baking sheet. Sprinkle parsley over the top. Smooth polenta to cover the baking sheet entirely.
  • Let cool, then place into the freezer for 2 hours.
  • Preheat the air fryer to 400 degrees F for 5 minutes.
  • Remove the baking tray from the freezer. Carefully pull the parchment paper up to lift the polenta out of the tray. Use a sharp knife and cut into 1-inch thick x 4-inch long rectangles.
  • Brush each polenta fry with truffle oil and sprinkle parmesan cheese and sea salt flakes over the tops. There should be truffle oil and parmesan cheese left over after this step
  • Place fries into the air fryer basket in a single layer with ½” spacing. Cook for 10 minutes. Flip after 7 minutes. Work in batches to prevent overcrowding as this may affect the cooking time. Check to be sure the fries are golden brown.
  • Meanwhile, prepare truffle mayo. Combine all ingredients into a small bowl and whisk well.
  • Toss fries with remaining truffle oil and parmesan cheese. Garnish with chopped parsley and serve with truffle mayo dip.

Notes

Don’t overcrowd: Fry in batches so they crisp evenly.
Freeze until firm: Chilling helps the fries hold their shape.
Use good truffle oil: A little goes a long way in building great flavor.
Cut evenly: Uniform fries cook more consistently.
