Air Fryer Twice Baked French Onion Baked Potatoes

These air fryer twice-baked French onion baked potatoes are flavor-loaded and make the most delicious side.

Ingredients

  • 2 baking potatoes cleaned not peeled (I used Russet)
  • 1 Tablespoon oil
  • ¼ Cup butter melted
  • 1 Tablespoon onion soup mix
  • ½ Teaspoon salt
  • ¼ Teaspoon black pepper freshly ground
  • ½ Cup milk
  • Cup sour cream
  • Cup crispy fried onions plus more for topping
  • 1 Cup Colby cheese shredded

Instructions

  • Preheat the air fryer at 400°F for 5 minutes.
  • Clean and pat the potatoes dry. Pierce each one a few times with a fork.
  • Coat the potatoes with a thin layer of oil. You can also add a sprinkle of salt or garlic powder if liked.
  • Place the potatoes in the air fryer and air fry for 45 to 50 minutes at 400°F. The potatoes are cooked when the inside temperature is between 195 and 205°F.
  • Take them out of the air fryer and allow them to cool, for 15 to 20 minutes or until you can handle them.
  • Cut off the ⅓ top part of the potatoes, lengthwise.
  • Scoop all the potato flesh from inside without breaking the skin.
  • Put the scooped potato flesh in a mixing bowl.
  • Add the melted butter, onion soup mix, salt and pepper. Mix well with a hand mixer, potato masher or fork.
  • Add the milk and sour cream. Mix until all ingredients are combined.
  • Add the French fried onions and ½ cup shredded Colby cheese. Mix well.
  • Scoop the potato mixture back into the skins.
  • Sprinkle the remaining shredded cheese on top.
  • Air fry at 325°F for 10 minutes or until the cheese is golden and melted.
  • Cool for a few minutes before serving.

Notes

Reuse the potato lids: What to do with the top of the potato (⅓)? You can make a mini twice-baked potato or just air fry it and eat it as a chip.
Adjust for size: The size of the potato will impact the cooking time.
Don’t overfill: Leave a little room at the top of the potato skins when refilling to prevent the filling from spilling out as they cook.
Check for doneness: Air fryer models can vary, so keep an eye on your potatoes during the second air fry to avoid overcooking the filling. Your potatoes should be fork tender.
Get extra crispy skins: For extra crispy potato skins, rub the potatoes with a bit of oil and sprinkle with salt before the first air fry.
