Preheat the oven to 350 degrees F. Lightly spray a donut pan with cooking spray.
In a medium mixing bowl, mix together the gluten free flour, cinnamon, salt, baking powder and granulated sugar.
Add in the vanilla extract, eggs and applesauce. Stir until just combined.
In a piping bag (or plastic Ziploc bag), add the donut batter. Cut the end of the bag and pip into a prepared donut plan. Bake in a preheated oven for 15 minutes, or until set.
While the donuts are baking, prepare the glaze. In a separate bowl, mix together the powdered sugar, ground cinnamon and a dash of nutmeg. Add in the vanilla extract and stir. Slowly add in the milk a little at a time until the desired consistency is achieved.
Once the donuts have finished baking, cool slightly. Dip in cinnamon glaze and let it set on a wire cooling rack.
Serve warm with your favourite cup of coffee or hot apple cider.
