Easy Easter Mini Egg Nest Cupcakes

Buttercream
- 1 Cup unsalted butter softened
- 5 Cup icing sugar
- 2-3 Teaspoons milk or heavy cream
- 2 Teaspoons vanilla extract
- food colouring green
- 1/4 Cup cocoa
Preheat oven to 350 degrees F. Grease or place cupcake liners in cupcake pan.
With an electric mixer, beat all cake ingredients on low speed for 30 seconds, scraping bowl as needed. Beat on medium for 1 minute, until fully combined.
Fill cupcake tin to 3/4 full. Bake 20 to 25 minutes, until a toothpick comes out clean in centre of the cupcake.
Allow cupcakes to cool completely before decorating.
While waiting for cupcakes to cool, prepare icing by mixing together all ingredients except cocoa and green food coloring. Once desired consistency is reached, divide icing into two medium bowls. In one bowl mix in food coloring. In the second bowl mix in cocoa.
Add icing to piping bags fitted with tip of choice. Decorate cupcakes by having green at the base as your “grass”. Swirl chocolate icing on top as the “nest.” Add 3 or 4 mini eggs to the top. Do this with all cupcakes.
- Cupcakes freeze well before icing
- If icing is too thick while mixing, add more milk. If too thin, add more icing sugar.
- You can use brown icing as the nest without grass if preferred.
