  • 5 Cloves garlic
  • 3 Cups almond milk
  • 1 1/2 Teaspoons salt
  • 1 Teaspoon pepper
  • 3 Tablespoons flour gluten free
  • 3/4 Cup parmesan vegan freshly grated

The Rest

  • 8 oz spaghetti gluten free
  • 3 Cups cauliflower chunked
  • 3 Tablespoons olive oil
  • 3 Cloves garlic minced
  • 4 slices bacon chopped

Optional Garnish:

  • 1 Pinch Paprika
  • 1 Tbsp Parmesan
  • 1 Sprig Parsley

Carbonara Sauce

  • Steam the cauliflower florets and the whole garlic cloves.
  • Once they are soft, add the cauliflower and garlic to a blender.
  • Add almond milk and Parmesan (vegan works fine) to the blender and purée until smooth to make the sauce.
  • Transfer the sauce mixture to a large skillet.
  • Heat mixture on medium high and add the gluten free flour, salt and pepper.
  • Whisk until mixture is thickened.

Roasted Cauliflower

  • Preheat oven to 450F. Lightly oil a baking sheet and place the cauliflower chunks onto the prepared baking sheet.
  • Add the remaining olive oil and the minced garlic.
  • Place in the oven and bake for 20 minutes, or golden brown.

  • Place the chopped bacon in a skillet.
  • Cook until crispy.
  • Place bacon pieces on paper towel to remove excess grease.

The Rest

  • Cook your favourite gluten free pasta per the instructions. Drain and place in a serving bowl.
  • Place the cauliflower carbonara sauce on top of the pasta.
  • Add the roasted cauliflower and toss lightly.
  • Top with the bacon.
  • Optional: Garnish with additional Parmesan cheese, chopped parsley and a sprinkle of paprika if desired.
