Hey all my veggie lovers! You are going to LOVE this sweet potato kale salad. It is so tasty with roasted vegetables and a caesar-ish dressing.

  • 2 Sweet potatoes small and sliced
  • 1/4 Cup olive oil
  • 1 Pinch Salt
  • 1 Pinch Pepper
  • 1 Can chickpeas drained
  • 1 Head kale large and shredded
  • 4 Cups brussels sprouts halved
  • 1.5 Avocados sliced

Ceasar-ish Dressing

  • 1/4 Cup olive oil
  • 1 lemon large, juiced
  • 2 Tablespoons tahini
  • 1-2 Cloves garlic grated
  • 1 Pinch Salt
  • 1 Pinch Pepper
  • 1/3 Cup parmesan vegan


  • Preheat oven to 400 degrees F.
  • Place sweet potatoes, chickpeas and brussel sprouts on the baking sheet.
  • Drizzle on the olive oil and toss lightly
  • Roast in the oven for 45 minutes or until everything is golden brown. Watch it closely as cooking time will vary depending on size of pieces.
  • While the vegetables are roasting, cut the kale up into pieces and place in a salad bowl.
  • For the caesar-ish dressing, combine all ingredients in a blender and blend until smooth.
  • Let the roasted vegetables cool for about 20 minutes and then add the sweet potatoes, chickpeas and brussel sprouts to the salad bowl.
  • Add the dressing, and toss to combine ingredients.
  • Top the salad with avocado and (optional) some vegan parmesan.
