Yesterday for breakfast I made a raspberry pineapple chia pudding and boy was it ever good!!

  • 1 1/2 cups raspberries frozen
  • 1/2 cup pineapple frozen
  • 1/2 cup water
  • 1 tablespoon honey
  • 1 1/2 cups almond milk
  • 2 dates pitted
  • 1/3 cup chia seeds


  • 2 Tbsp granola
  • 1/4 Cup fresh fruit


  • Blend together the raspberries, pineapple, water, and honey.
  • Pour into a bowl and place in the refrigerator.
  • Blend together the almond milk, and dates.
  • Pour into a bowl and add the chia seeds. Stir constantly for 3 minutes. and then let stand for 5 minutes
  • Divide chia mixture into glasses and then add the raspberry mixture on top. Cover with plastic wrap, and let sit overnight in refrigerator.
  • Top with granola and fresh fruit before serving.
