Preheat your oven to 350 degrees F. Prepare your loaf pan by lining with parchment paper and then set aside.
In a bowl, combine your oat milk and apple cider vinegar. Allow it to sit for about 2 minutes.
In another bowl, whisk together wet ingredients and also the flax seeds. Stir to combine.
Add in the remaining ingredients and stir to combine.
In another bowl, combine all of the topping ingredients. Mix until it forms a crumbly texture.
Transfer wet mixture into the prepared loaf pan.
Add the crumble evenly on the top of the wet loaf mixture.
Bake the vegan gluten free apple loaf for about 50 minutes. Cool before slicing.
