Ingredients

Syrup 

  • 3/4 Cup water
  • 1 Cup sugar
  • 1/2 Cup fresh ginger peeled and sliced

Mojito 

  • 3 limes
  • 1/2 Cup mint
  • 2 Cup pineapple chunks
  • 1 Cup pineapple juice
  • 1 Can club soda
  • 1 Cup ice

Instructions

  • In a small saucepan, pour the water. Add sugar and sliced ginger.  Heat over low flame.  
  • When the sugar has dissolved, remove the pan from the heat and chill. Once chilled, strain and discard the ginger. 
  • In a serving pitcher, add lime wedges, ice, mint leaves and ¼ cup of the ginger syrup 
  • Add pineapple juice and soda. Serve!
