Pumpkin Pie Popsicles with Oreo Crumble

These creamy pumpkin pops with Oreo coating are delish! Pumpkin pie popsicles are great any season, and anyone can make this recipe using pumpkin purée. If you are a pumpkin spice lover, or looking for tasty fall treats for kids, these are ideal.

Ingredients

  • 1/2 Cup pumpkin puree
  • 3/4 Cup heavy cream
  • 1/4 Cup brown sugar
  • 2 Tbsp. maple syrup
  • 1 Tbsp. vanilla extract
  • 1 Tsp. cinnamon
  • 1/2 Tsp. clove
  • 1/2 Tsp. nutmeg
  • 1/2 Tsp. ginger
  • 1/4 Tsp. guar gum
  • 1/2 Cup Oreo cookies crushed
  • 1/5 Tbsp. butter melted

Instructions

  • In a small saucepan mix together the pumpkin puree, cream, sugar, spices, salt, vanilla, and maple syrup until combined.
  • Heat mixture on stove until it is hot, not boiling or simmering just hot.
  • Very slowly add in the guar gum while whisking the mixture, this is very important as it will prevent clumping. Continue mixing until combined and the mixture begins to thicken a little bit.
  • Remove the mixture from the heat.
  • Use a spoon or ladle to pour the mixture into your popsicle moulds leaving just a little space for the Oreo crust.
  • In a small bowl or i n the bag you crushed your Oreos in, mix together the melted butter and the Oreos.
  • Spoon a small amount of the Oreo crust on top of the popsicles and gently pat down.
  • Place the completed popsicles in the freezer for at least 8 hours
  • Pop the popsicles out of the molds.
