Tomato Burrata Bites

Ingredients

  • 5 tomatoes fresh, Roma or Campari
  • 8 Ounces burrata cheese
  • 2 Tablespoons extra-virgin olive oil
  • salt and black pepper to taste
  • basil fresh, to garnish

Instructions

  • Cut the tops off of the tomatoes and scoop out the seeds and flesh.
  • Drizzle the insides of the tomatoes with a tablespoon or 2 of olive oil and season with salt and pepper.
  • Stuff each tomato with a spoonful of burrata cheese.
  • Drizzle with more olive oil and another sprinkling of salt of pepper before garnishing with fresh basil.

Notes

Use the best ingredients: It's important to choose good quality ingredients for this appetizer with burrata, since there are so few of them.
Serving temperature: These can be served chilled but the tomatoes are more flavorful at room temperature.
Don't make too much: These are best served straight after you make them. If you have tomatoes and burrata left over, keep them separate.
