4 Ingredient Strawberry Sorbet

Four simple ingredients blend into a smooth strawberry purée that freezes into a refreshing, dairy-free treat. It’s light, bright and ideal for warm days.

Ingredients

  • 1 Cup granulated sugar
  • 1 Cup water
  • 3 Cups strawberries fresh or partially thawed
  • 3 Tablespoon lemon juice fresh

Instructions

  • Bring sugar and water to a slow boil in a medium saucepan, stirring often. 
  • Quickly lower heat and simmer while stirring for another 2 to 3 minutes. Remove from heat and set aside.
  • Wash and trim off the stems of the strawberries and put them in a blender along with the lemon juice. Blend into a puree that's smooth and free of chunks.
  • Add sugar mixture to the strawberry mixture and briefly blend on low speed for 15 to 30 seconds.
  • Pour mixture to a metal container or large ice cube trays and freeze for at least 3 to 4 hours until firm.
  • Scoop out with ice cream scooper or spoon and serve. 

Notes

Taste before freezing: Adjust sweetness or citrus while the purée is liquid.
Strain if needed: For an extra-smooth texture, pass the purée through a sieve.
Freeze flat: A shallow pan freezes faster and scoops more easily.
Soften briefly: Let the sorbet sit a few minutes before scooping for perfect texture.
