7 Up Pound Cake

If you love zesty flavors, you're going to love this sweet, moist and truly delicious 7 Up pound cake. It's a great treat and ideal if you have guests coming over.

Ingredients

For the Cake:

For the Glaze:

  • 1 Cup powdered sugar
  • 2 or 3 Tablespoons 7 Up soda
  • 1 Teaspoon lemon zest
  • ½ Teaspoon lime zest

Instructions

  • Preheat your oven to 325°F.
  • Grease and flour a Bundt pan.

Make the Cake Batter:

  • In a medium bowl, whisk together the flour, baking powder and salt. Set aside.
  • In a large mixing bowl, cream the butter and sugar together until very light and fluffy, making sure to scrape down the sides of the bowl halfway through, 10 to 15 minutes.
  • Add the eggs one at a time, beating well after each addition until fully incorporated.
  • Gradually add the flour mixture to the butter mixture, mixing just until combined.
  • Add the lemon zest, and lime zest and slowly pour in the 7-Up soda. Gently mix until the soda is incorporated.
  • Pour the batter into the prepared Bundt pan, spreading it evenly.

Bake the Cake:

  • Bake for 75 to 85 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.

Make the Glaze:

  • Once the cake is cooled, make the glaze by whisking together the powdered sugar, 7-Up and lemon zest.
  • Add more powdered sugar or 7 up until you get to a thick pourable consistency.
  • Drizzle glaze over cake and serve.

Notes

Measuring the flour: Spoon the flour into the measuring cup and use a knife to level it off, for the most accurate result.
Room temperature ingredients: Make sure the butter, eggs and soda are at room temperature before you start this moist pound cake recipe.
Using soda in cake batter: Once you've poured the soda into your measuring cup, wait for the bubbles to subside (so you get an accurate measurement). Once added to the batter, immediately put the cake in the oven to stop the bubbles deflating.
