Air Fryer Cheesy Bacon Hasselback Chicken

This easy stuffed chicken recipe is a cheesy dream. Every slit is packed with bold, creamy flavor, and the air fryer cooks it all to juicy, golden perfection. It’s a crowd-pleaser you’ll want on repeat.

Ingredients

  • 3 chicken breasts skinless and boneless
  • 4 Ounces cream cheese half a block
  • ½ Cup colby jack cheese shredded 
  • ½ Cup pepper jack cheese shredded 
  • ½ Cup cheddar cheese shredded 
  • ½ Cup bacon cooked and chopped
  • 1 Cup spinach fresh, chopped
  • 1 Teaspoon garlic fresh, minced
  • 1 Teaspoon smoked paprika 
  • ½ Teaspoon salt
  • ½ Teaspoon black pepper
  • ½ Cup bocconcini mini mozzarella balls
  • nonstick cooking spray for greasing

Instructions

  • Make about 6 slits across the top of each chicken breast, making sure not to cut all the way through. 
  • In a bowl, combine the remaining ingredients except the bocconcini and mix well. 
  • Fill each slit with the cheese mixture and top with a couple bocconcini balls. 
  • Place each chicken breast in the air fryer basket and spray with olive oil or nonstick cooking spray. Place the basket in the air fryer. 
  • Set the air fryer for 360 degrees F for 15 minutes.  Check for doneness, if not completely cooked, cook for an additional minute or two. 

Notes

Slice evenly: Make sure your slits are deep enough to hold filling but not all the way through.
Don’t overstuff: Too much filling can spill out and burn in the air fryer.
Check doneness: Use a meat thermometer to make sure the chicken reaches a safe internal temperature.
