Make the Cake:

  • Preheat the oven to 350°F and grease a 9-inch square baking dish using a pastry brush.
  • Whisk the flour, brown sugar and cinnamon in a large bowl.
  • Mix in the egg and milk using a whisk or wooden spoon.
  • Mix in the sour cream and vanilla extract until all ingredients are combined. Don’t overmix.
  • Pour the cake batter into the prepared baking pan and spread evenly.
  • Set aside while making the topping.

Make the Topping:

  • Mix the Bisquick with the butter, sugar and cinnamon in a large bowl until crumbly.
  • Sprinkle the topping evenly on top of the batter.

Bake the Cake:

  • Bake for 35 to 38 minutes or until the cake is golden brown, the topping is golden, and a toothpick inserted into the center comes out clean.
  • Allow the cake to cool for 10 to 15 minutes, then slice and serve.

Notes

Don't overmix: Overmixing the coffee cake batter leads to a dense texture, so mix the ingredients only until just combined.
Check for doneness: When the cake is done, it should be golden brown and set on top, and a toothpick inserted into the center should come out clean.
Serve it warm: Although it can be served at room temperature, this moist coffee cake is best served warm. Give it 10 to 15 minutes to cool a little. Serving it hot directly from the oven makes it more likely to crumble when sliced.
