Blueberry Lemonade Popsicles

These blueberry lemonade popsicles are a burst of summer in every bite. With fresh fruit, mint and citrus juice, they’re a refreshing way to beat the heat. Simple and vibrant, these popsicles are made to share.

Ingredients

  • ½ Cup plus 1 Tablespoon blueberries
  • 1 orange juiced
  • 2 lemons juiced
  • ¼ Cup granulated sugar
  • 3 mint leaves

Instructions

  • Add a tablespoon of blueberries, the orange and lemon juices, sugar and mint leaves to a blender. 
  • Blend until combined. Adjust sweetness if desired. A quick tip: at this point, it might be quite sweet or sour, but when chilled flavors tend to be less intense. 
  • Place some blueberries in each popsicle mold and then pour the lemonade. Remember to add the popsicle sticks too! 
  • Place them in the freezer for at least 6 hours or until completely set. 

Notes

Use fresh-squeezed juice: For the best flavor, avoid bottled juice.
Use chilled ingredients: This helps the popsicles set more quickly and evenly.
Layer ingredients: For a marbled effect, pour a little at a time and let it settle between pours.
