Breakfast Fries

Make twice-baked fries with cheese, bacon, sunny side up eggs, and adobe mayonnaise and change your (breakfast) life.

Ingredients

  • 16 Ounces French fries frozen
  • ½ Cup cheddar cheese sharp, shredded
  • 4 Ounces bacon cooked and chopped (about 3 slices)
  • 6 eggs large
  • ½ Cup mayonnaise
  • 3 Teaspoons adobo sauce from the can
  • ½ Teaspoon kosher salt
  • ½ Teaspoon black pepper
  • juice from 1 lime
  • ¼ Cup green onions chopped, for garnish

Instructions

  • Preheat the oven to 450°F.
  • Place the frozen fries in an ovenproof skillet and bake for 10 minutes.
  • Take the fries out of the oven and top with the cheddar cheese and chopped bacon.
  • Crack the eggs on top of fries, and put the skillet back into the oven. Cook for another 10 minutes or until the egg yolks are firm and white.
  • In a bowl, whisk together the mayonnaise, adobo sauce, salt, black pepper, and lime juice until smooth. Store in the fridge until ready to serve.
  • Drizzle the spicy mayo on top of the fries and garnish with green onions.

Notes

Spice level: When making the chipotle mayonnaise, you can use as little or as much adobo sauce as you want. You can even cut a chipotle up and throw it in the sauce for more heat.
Choose quality fries: Use high quality frozen fries or make your own for the best texture and flavor. If making homemade fries, cut them evenly to ensure uniform cooking.
Achieve maximum crispiness: Bake or air fry the frozen fries until they are crispy and golden brown. This helps them hold up better under the toppings and provides a satisfying crunch.
Serve immediately: Breakfast fries are best enjoyed fresh and hot. Serve them immediately after assembly to ensure the fries remain crispy and the cheese is perfectly melted.
