Butter Bean Stew

Warm up with a hearty butter bean stew that’s easy to make in one pot. Perfect for those cozy nights, this recipe is both delicious and satisfying.

Ingredients

  • 2 Teaspoons olive oil extra-virgin
  • 1 yellow onion diced
  • 3 Cloves garlic minced
  • ½ Cup smoked ham diced
  • ½ Cup smoked sausage links, fully cooked and diced
  • 1 Tablespoon butter
  • 1 Cup pearl couscous
  • 3 to 4 Cups chicken broth low sodium
  • 2 Cans butter beans 30 Ounces total, drained and rinsed
  • 2 Teaspoons parsley freshly chopped
  • 1 Teaspoon thyme freshly chopped
  • 1 to 2 Teaspoons smoked paprika
  • 1 Teaspoon crushed red pepper flakes
  • 1 lemon juiced
  • Cup heavy cream
  • salt and black pepper to taste
  • ¼ Teaspoon liquid smoke optional

Instructions

  • In a Dutch oven or pot, heat the oil over a medium heat.
  • Add the diced onions and cook for 2 to 3 minutes or until they start to soften.
  • Add in the butter and minced garlic and cook for another minute.
  • Add the couscous to the pot and toast for about a minute.
  • Next, pour in 3 cups of chicken broth and bring everything to a boil.
  • Reduce the heat to medium-low.
  • Add in the beans, sausage, diced ham, parsley, herbs, smoked paprika, and red pepper.
  • Cook for 10 to 12 minutes in the uncovered pot or until the couscous is tender.
  • At this point, you can add more broth if you’d like your beans a little brothier.
  • Taste the beans and add salt, black pepper and/or more smoked paprika if needed.
  • If you’d like a smokier flavor, add a few drops of liquid smoke to the dish.
  • Add the lemon juice and heavy cream and cook for 2 more minutes.
  • Garnish with a drizzle of olive oil and fresh parsley.

Notes

Use fresh ingredients: Fresh onion, garlic and lemon juice give the stew a wonderful fresh flavor.
Don't overdo the liquid smoke: Add a few drops for a subtle smokiness but don't add too much or the smoke flavor will overwhelm the lighter flavors in the dish.
Let it cool before storing: Don't store leftovers until they're cooled, otherwise the condensation in the container will drip into the stew and make it watery.
