Caramel Fudge Recipe

This wonderful caramel fudge appeals to everyone, old and young, and you can give some as a gift or stash it all away for yourself (no judgement here!)

  • Line an 8-inch square baking dish with parchment paper.
  • Put the chocolate chips in a mixing bowl and microwave for 2 minutes, stopping every 30 seconds to stir. Keep cooking until the mixture is smooth and creamy.
  • Now add the can of caramel and stir until well combined. It will thicken up.
  • Transfer the mixture into the prepared baking dish and press it flat with a spatula.
  • Refrigerate until set, at least 2 hours, then cut into 1-inch squares to serve.

Notes

Use Nestle chocolate chips: I always get a good outcome if I use Nestle white chocolate chips, so I'd recommend them.
Don't get it too hot: Avoid heating the fudge mixture over 240°F. If you do, the milk and sugar will separate and your fudge will come out waxy and greasy. It will taste the same but not look as good.
Make extra: Salted caramel fudge makes a wonderful gift, so make a second batch!
