Ingredients

  • 1 Pound lean ground beef
  • ½ Cup water
  • ½ Cup onion finely diced
  • 2 Cloves garlic minced
  • ½ Teaspoon chili powder
  • ½ Teaspoon onion powder
  • ¼ Cup mayonnaise
  • 1 Cup cheddar cheese shredded
  • 1 Cup lettuce shredded
  • 1 Teaspoon garlic powder
  • ¼ Cup ketchup
  • 1 tomato large, diced
  • ¼ Cup pickles chopped
  • 8 flour tortillas small
  • salt and black pepper to taste
  • mustard for topping, optional

Instructions

  • Cook the ground beef in a skillet until browned, breaking it into small pieces with a wooden spoon as it cooks. Drain the excess grease (optional).
  • Add the diced onions to the skillet and sauté until the onions are translucent (or skip this stew if you want them crunchy).
  • Add the garlic and cook for 1 minute. Add the water.
  • Season the beef mixture with garlic powder, chili powder, onion powder, salt, and pepper. Stir well to combine. Taste and adjust seasoning if desired.
  • Cook until about 90% of the liquid has evaporated.
  • In a separate bowl, combine the ketchup and mayonnaise to create the special sauce.
  • Warm the tortillas in a dry pan or microwave for 15 to 20 seconds.
  • Assemble the cheeseburger tacos by adding a spoonful of the beef mixture onto each tortilla.
  • Top with shredded cheese, lettuce, tomatoes, and chopped pickles.
  • Drizzle the mustard (if using) and special sauce on top.
  • Serve right away.

Notes

Perfectly brown the beef: Break the ground beef into small pieces as it cooks to get even browning and a great texture in your tacos.
Season generously: Taste and adjust the seasoning as you go. A well-seasoned beef mixture makes all the difference in flavor.
Use fresh ingredients with loads of crunch: Fresh toppings like shredded lettuce, diced tomatoes and chopped pickles add a crisp, vibrant contrast to the savory beef.
