Cherry Cheesecake Popsicles

These cherry cheesecake popsicles are creamy, fruity and simple to prepare. With a swirl of real cherries and a buttery cookie base, they bring summer flavor in every bite. You can customize them easily with different fruits or cookies.

Ingredients

  • 1 Cup cookie crumbs I used digestive cookies
  • 3 Tablespoons butter melted
  • 2 Cups cherries fresh, pitted
  • 2 Tablespoons water
  • ½ Cup granulated sugar
  • 8 Ounces cream cheese
  • 1 Cup milk

Instructions

  • In a small bowl, mix the cookie crumbs with the melted butter. Set aside
  • To a blender, add 1 ½ cups of the pitted cherries, 2 tablespoons of the sugar and the water. Blend until pureed and then rinse out the blender jug.
  • To the blender, add cream cheese, milk and remaining 6 tablespoons of sugar. Blend until smooth.
  • Divide the mixture in 2, and mix one half with the puréed cherries to make the cherry cream cheese mix.
  • Slice the remaining ½ cup cherries in half.
  • In half of the molds, put cherry slices and fill up with plain cream cheese mix. Fill up the other half of the molds with cherry cream cheese mix.
  • Add cream cheese and fruit mix to the popsicle molds - only make them ⅔ of the way full.
  • Top with cookie mixture and gently press into the mold.
  • Cover the popsicle mold and insert the popsicles sticks.
  • Freeze for at least 8 hours (preferably overnight).
  • To serve, run popsicle mold under warm water for 5 to 10 seconds to easily remove the popsicles.   

Notes

Use ripe fruit: Riper cherries will blend better and give sweeter flavor.
Freeze overnight: Make sure these popsicles are fully frozen for the best texture.
Warm the molds: Run under warm water for a few seconds to release your icy pops easily.
