Chocolate Covered Strawberry Popsicles

These fruity frozen treats are dipped in a glossy layer of chocolate for the ultimate summer dessert. With just a few ingredients, you can whip up a batch with no fuss. They're a fun and refreshing way to cool off.

Ingredients

  • 1 Cup strawberries fresh
  • 1 Cup strawberries frozen
  • ½ lemon juiced
  • ½ Cup granulated sugar

For the Chocolate Dip

Instructions

  • Blend strawberries, lemon juice and sugar until smooth.
  • Pour into popsicle molds and freeze overnight.  
  • Melt chocolate and coconut oil in microwave, at 30 second intervals, until melted.  
  • Remove popsicles from molds using slightly warm water (not hot). Dip into chocolate. Drip off excess chocolate and place on a baking sheet.
  • Freeze again until the chocolate is set.

Notes

Use warm water on the molds: Briefly run molds under warm water to release pops easily.
Work quickly when dipping: The chocolate hardens fast, so dip and set immediately.
Freeze flat: After dipping, place popsicles on a parchment-lined sheet to avoid sticking.
