Chopped Cheese Sandwich

A cheesy, beefy chopped cheese sandwich with lettuce, tomato & tangy condiments—easy to make and perfect for weeknights or game day cravings.

Make the Beef Filling:

  • In a mixing bowl, combine the ground beef, onion, garlic powder, Italian seasoning, rosemary, cumin, salt, and black pepper.
  • Mix well and let it marinate for 15 minutes.
  • Heat a skillet over a medium heat and add the butter.
  • When the butter has melted, add the ground beef mixture to the skillet.
  • Cook for 8 minutes or until the beef is browned with no pink remaining, breaking up any larger clumps as you stir.
  • Drain off any excess fat (optional).
  • Lay the cheese slices over the beef.
  • Once melted, chop and mix the cheese into the beef mixture.

Assemble the Sandwiches:

  • Slice the hoagie rolls in half without cutting all the way through.
  • Spread a thin ketchup layer on the bottom halves or the hoagie rolls.
  • Top with beef filling, tomato slices and lettuce.
  • Drizzle with mustard and additional ketchup if liked.
  • Cover with the top halves of the rolls and serve immediately.

Notes

Choose lean beef: As you'll be discarding any excess grease anyway, it's simpler to start with lean beef.
Use a large skillet: I used a large cast iron skillet but anything would work.
Slicing the hoagie rolls: Don't cut all the way through, otherwise a lot of the beefy cheese filling will just fall out the other side when you bite into it.
Check the beef doneness: The beef is done when there is absolutely no pink remaining in there.
