Instructions

Make the Cupcakes:

  • Preheat the oven to 350°F and line a cupcake pan with some paper liners.
  • In a medium bowl, sift the flour with the baking powder, cocoa powder, baking soda, and salt.
  • In another bowl, cream the butter and sugar until fluffy and light.
  • Beat in the eggs, vanilla and milk until well combined.
  • Now you can gradually mix in the dry ingredients until everything is mixed together.
  • Divide the resulting batter evenly among the cupcake liners, and fill each one about 2/3 full.
  • Bake the cupcakes in the preheated oven for 18 to 20 minutes or until a toothpick inserted into the middle of one comes out clean.
  • Let the cupcakes cool completely before decorating.

Make the Buttercream:

  • Sift the powdered sugar into a mixing bowl and add the butter.
  • Beat for 5 minutes or until you have a firm buttercream.
  • If the buttercream is too thick, add a little bit of warm milk (less than a tablespoon) and mix until it softens a little.

Decorate the Christmas Tree Cupcakes:

  • Frost the cupcakes with the prepared buttercream and then roll in coconut to look like snow.
  • Melt the white chocolate or candy melts and dye some green, leaving the rest white.
  • Put candy sticks on a baking sheet lined with parchment paper and drizzle over the chocolate or candy melts to resemble trees.
  • Chill for 20 minutes in the refrigerator or freezer.
  • Once set, carefully peel them off the parchment paper and decorate each cupcake with one.
  • Add any other decorations (candy canes, mini gingerbread men etc) you want.

Notes

Take your time: You can't hurry perfection (or cupcakes!) so make sure you plan ahead. These need time to bake, time to cool completely, and you should also take your time making the Christmas tree decorations. The results will be worth it.
Get creative: Add festive sprinkles or any other embellishments you want to make your Christmas cupcakes unique. You could add star-shaped Christmas tree toppers or some green and red sprinkles for a festive feel.
The perfect doneness: Check if a toothpick inserted into the middle of a cupcake comes out clean. If so, take them out of the oven - they're done!
