Church Window Cookies

My easy 5-ingredient, no-bake cookies make the perfect holiday season treats to serve with a mug of coffee or hot chocolate.

  • In a microwave-safe bowl, melt together the chocolate chips and butter, in 15 second increments, stirring between, until melted.
  • Add the marshmallows and walnuts to the melted chocolate and mix well; you want everything to be completely coated in chocolate so it holds together.
  • Place a large, long sheet of parchment paper or plastic wrap on a clean work surface. Spread half of the coconut in a long thick line in the center. Scoop the chocolate marshmallow mixture onto the coconut line, roughly in a log shape.
  • Top the loose log of chocolate with the remaining half of the coconut. Gently use your hands or the sides of the parchment to pat the coconut flakes into the top and sides of the log.
  • Pull the two long sides of parchment up to meet at the top above the chocolate, and fold or roll downward to the top of the log. Twist the ends, just as you would a candy wrapper and set in the fridge for at least 4 hours or overnight.
  • When ready to serve, slice with a sharp knife into ½” slices.

Notes

Chill to slice: The colder the log is when you cut it, the better. It means you will get cleaner, rounder slices.
Clean the knife between slicing: Wipe the blade between each cut for a clean look.
Roll with paper or plastic: You can use parchment paper, wax paper or plastic wrap for rolling. This helps to get the right shape.
Shaping tip: Every 15 to 30 minutes, for the first hour or 2 of chilling, you can take the log out and roll it on the counter (while still wrapped) to help give it a nice log cylindrical shape and not have a flat bottom.
