  • Line an 8 x 8-inch square baking pan with parchment paper, extending the sides of the paper over the edges of the pan; set aside.

Make the Crust

  • Add 1 package of Circus Animal Cookies to a food processor.
  • Pulse until coarsely crushed.
  • Pour in melted butter and process until combined.
  • Spread the crust mixture evenly into the prepared baking pan.

Prepare the Filling

  • In a large mixing bowl, combine pudding mix and milk.
  • Use 1 or 2 drops of food coloring to tint it pink (optional).
  • Fold in half the whipped topping until smooth.
  • Pour the filling on top of the crust layer and use a spatula to smooth it out.

Add the Toppings

  • Add a final layer of the remaining whipped topping.
  • Coarsely crush the remaining cookies with a Ziploc bag and meat mallet, and sprinkle over the top.
  • Decorate with the sprinkles.
  • Cover and refrigerate overnight or for 8 hours, then serve and enjoy.

Notes

Parchment overhang: Makes lifting and slicing much easier.
Full chill time: The dessert needs several hours to set properly.
Gentle folding: Overmixing the whipped topping can affect texture.
