Coconut Strawberry Kiwi Smoothie

This strawberry kiwi smoothie is a great way to boost your fruit and vegetable intake. It takes mere minutes to whip up and tastes incredible with fruit, coconut and vanilla flavors in every sip.

Ingredients

For the Kiwi Layer:

For the Strawberry Layer:

  • ½ banana frozen
  • 1 Cup strawberries frozen
  • ¼ Cup coconut milk

Optional Garnishes:

  • strawberry slices
  • banana slices
  • kiwi slices
  • chia seeds

Instructions

  • Add the ingredients for the kiwi layer to a blender and blend until smooth.
  • Divide the kiwi mixture between 2 serving glasses.
  • Add the ingredients for the strawberry layer to a blender (you don't need to clean it out first) and blend until smooth.
  • Pour this mixture into the serving glasses on top of the kiwi layer.
  • Garnish with fruit slices and/or sprinkle a few chia seeds on top if liked, then serve immediately.

Notes

Speedy kiwi prep: Use a kiwi tool to remove the kiwi from the skin and make pieces with ease. If you don't have one, use a sharp knife to peel the kiwi and chop it up.
Layered smoothie tip: To make a 2 (or more) colored smoothie, use any fruit and ingredients you want but make sure you pour the thicker mixture into the glass first so the slightly thinner mixture floats on top. Drink from the top and you can enjoy the top layer first. Or use a straw and sip the bottom layer first.
Use a good quality blender: Before you even start making this smoothie with coconut, ensure your blender is up to the job. Not every blender is equipped to handle hard ingredients like nuts, ice or frozen fruit.
