Cowboy Meatloaf and Potato Casserole

No matter how hungry you are, this rich-flavored cowboy meatloaf and potato casserole with bacon and cheese is sure to make your tastebuds and tummy truly happy!

Ingredients

  • Pounds ground beef
  • ¾ Cup onion chopped
  • 2/3 Cup breadcrumbs seasoned dry
  • ½ Cup BBQ sauce
  • 1 egg beaten
  • 2 Teaspoons chili powder
  • 2 Teaspoons salt
  • ½ Teaspoon black pepper
  • 2 Pounds potatoes peeled and cut into small chunks
  • 1 Can evaporated milk
  • ½ Cup butter
  • 1 Teaspoon garlic powder
  • ½ Teaspoon black pepper
  • ½ Cup canned fried onions French’s
  • 1 Cup Mexican blend cheese shredded
  • 6 Slices bacon cooked and crumbled

Instructions

  • Heat the oven to 350 degrees F.
  • In a large bowl, combine the beef, onion, breadcrumbs, BBQ sauce, egg, chili powder, pepper and half the salt.
  • Press the meatloaf evenly into a 9 x 13-inch pan and bake the meatloaf for 30 minutes.
  • Place the potatoes in a pan and cover with water. Boil for 20 minutes until soft. Drain, then add the milk, butter, garlic powder, remaining salt and pepper, and mash the potatoes well.
  • Remove the meatloaf from the oven and spread the potatoes evenly over the meat.
  • Sprinkle the top with the fried onions, then add the cheese and top with the bacon.
  • Place the casserole back into the oven and bake until the cheese is melted and bubbly, about 10 minutes. Serve hot.

Notes

Cooking the bacon: Bake the bacon on a foil-lined baking sheet for 20 minutes at 350°F, flipping once.
Perfect mashed potatoes: Mash the potatoes well, using a potato masher. Never use a blender or food processor, unless you like gluey mash!
Check for doneness: The meatloaf must reach 160°F in the center, so check before adding the potatoes layer.
