Creamy Tuscan Marry Me Gnocchi

Instructions

  • Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the gnocchi and fry for 2 to 3 minutes. Remove the gnocchi from the skillet and set aside on a plate.
  • In the same skillet, add the remaining tablespoon of olive oil. Add the garlic and cook until fragrant, for about 1 minute.
  • Add the heavy cream, chicken broth, Italian seasoning, salt, pepper, and parmesan cheese. Whisk the sauce until it starts to thicken.
  • Next, add the sun-dried tomatoes, spinach and gnocchi to the skillet. Gently toss to combine. Let it simmer for 5 minutes.
  • Serve immediately, garnished with chopped fresh basil.

Notes

Zest it up: A squeeze of lemon juice helps cut through the creaminess of the sauce but you only need a few drops.
Drain the tomatoes well: Make sure you drain the oil off the sun dried tomatoes before chopping and adding them to the gnocchi, or else the sauce will be greasy.
Serve with wine: Marry me gnocchi is wonderful served with a chilled Pinot Grigio or Sauvignon Blanc to cut through the rich creaminess. You can add a splash to the sauce too!
