Dirty Martini Pasta

This TikTok-inspired pasta is packed with flavor and attitude. Briny olives, bold gin and tangy cheese transform a simple pasta dish into something unforgettable. It’s fast, flavorful and fun.

Ingredients

  • ½ Pound spaghetti
  • 1 Tablespoon olive oil
  • 1 Cup Castelvetrano olives sliced, plus more for serving
  • 3 Cloves garlic thinly sliced or minced
  • zest of 1 lemon plus more for serving
  • ¼ Cup dry gin or vodka
  • 2 Tablespoons olive brine
  • 1 Tablespoon lemon juice fresh
  • 3 Tablespoons unsalted butter
  • ½ Teaspoon salt plus more to taste
  • ½ Teaspoon black pepper plus more to taste

To Serve

  • 3 Tablespoons blue cheese crumbled
  • flat-leaf parsley freshly chopped, optional

Instructions

Cook the Pasta

  • Cook pasta in salted water according to package instructions to al dente.
  • Drain and reserve ¼ cup pasta water.
  • When the pasta is about halfway through cooking, heat olive oil in a large skillet over medium heat.

Prepare the Sauce

  • Add olives and cook for 2 to 3 minutes, stirring occasionally.
  • Add garlic and lemon zest and cook until fragrant, 30 to 60 seconds.
  • Carefully pour in the gin and stir until it’s almost evaporated, 2 to 3 minutes.
  • Whisk in olive brine and lemon juice.
  • Add butter, cooked pasta, salt and pepper.
  • Toss to combine and add some of the reserved pasta water if the pasta seems dry.

Garnish and Serve

  • Serve garnished with crumbled blue cheese, fresh parsley and more olives and lemon zest if liked.

Notes

Use high-quality gin: The flavor really shines through, so choose one you enjoy drinking.
Cook garlic briefly: Only sauté for 30 to 60 seconds to avoid bitterness.
Don’t skip the pasta water: It helps the sauce cling to the noodles beautifully.
