Dirty Martini Shrimp

Ingredients

  • 1 Tablespoon olive oil
  • 1 Tablespoon butter
  • 1 shallot minced
  • 2 Cloves garlic large, minced
  • 1 Teaspoon lemon zest
  • 2 Pounds shrimp extra-large, peeled and deveined
  • cup dry vermouth
  • ½ cup olives Castelvetrano, pitted, torn or halved
  • 1 Pinch red pepper flakes
  • ½ Teaspoon salt
  • ½ Teaspoon black pepper freshly ground
  • juice from ½ lemon
  • 3 Tablespoons fresh parsley chopped, for garnish

Instructions

  • Heat the oil and butter in a large skillet over a medium heat. Add the shallots and cook for 2 to 3 minutes.
  • Add the garlic and lemon zest and cook for 1 minute or until fragrant.
  • Add the shrimp and sauté for 2 minutes, flipping halfway.
  • Add the vermouth, olives, red pepper flakes, salt, pepper, and lemon juice.
  • Simmer for 3 to 5 minutes, or until the liquid has reduced.
  • Garnish with chopped parsley and serve as an appetizer (for 8 people) or main dish (for 4 people).

Notes

Using frozen shrimp? Ensure they are completely thawed before use and pat them dry with paper towels.
Shrimp cooking too fast? Take the shrimp out of the pan and continue with the sauce, adding them back in just before serving. The smaller the shrimp, the faster they will cook.
Check for doneness: When the shrimp curl into a C shape, they're cooked. If they curl into an O shape, they're overcooked! So keep an eye on them.
