Dragon Fruit Ice Cream

Creamy and naturally pink, this dragon fruit ice cream is a fun and easy treat you can whip up in minutes. It is made without dairy or added sugar and perfect for cooling off any warm day.

Ingredients

  • 5 bananas medium
  • ½ dragon fruit

Instructions

  • Peeled and freeze bananas overnight. 
  • The next day, remove from the freezer and chop into 1-inch pieces. 
  • Transfer in a high speed blender or food processor. Blend or process until smooth.
  • Transfer in a loaf pan or any freezer friendly container with a lid. 
  • Freeze at least 8 hours before serving. 

Notes

Choose ripe fruit: For the best flavor and natural sweetness, make sure your bananas and dragon fruit are fully ripe before freezing and processing them. Ripe bananas are also easier to blend into a smooth, creamy consistency.
Freeze in advance: Remember to freeze your bananas overnight before making this ice cream. This is what gives it the perfect texture and eliminates the need for any additional ice or churning.
Blend thoroughly: Make sure to blend the frozen fruit until it's completely smooth. You don't want any lumps or chunks ruining the velvety texture of your ice cream. You are going to need a decent-quality blender for this, as frozen bananas are hard. They’re no match for mediocre-quality blender blades!
Freeze properly: After blending the ingredients, transfer them to a freezer-friendly container and make sure to freeze the ice cream for at least 8 hours before serving. This will guarantee that it's fully set and scoopably solid.
