Garlic Parmesan Baby Potatoes

Tender baby potatoes are flavored with garlic, herbs and cheese. This delicious potato side dish is simple to make and tastes heavenly.

Ingredients

  • 3 Pounds potatoes baby red, washed and halved
  • ¼ Cup olive oil
  • 4 Cloves garlic finely minced
  • ½ Teaspoon salt plus more to taste
  • ½ Teaspoon black pepper plus more to taste
  • 1 Tablespoon dried thyme
  • ¾ Cup parmesan cheese shredded, plus more to garnish
  • ½ Cup unsalted butter
  • fresh parsley chopped, for garnish

Instructions

  • Preheat the oven to 400ºF.
  • Bring a large pot of water to a boil. Add the potatoes and cook for 5 to 7 minutes. Drain and set the potatoes aside.
  • In a large mixing bowl, combine the olive oil, garlic, salt, pepper, thyme, and parmesan. Add the potatoes to the bowl and toss evenly to coat.
  • Arrange the potatoes on a large greased baking sheet in a single layer, cut side down.
  • Roast the potatoes in the oven for 25 minutes, flipping halfway with a spatula.
  • Melt the butter in a small glass mixing bowl and stir in the fresh parsley.
  • Transfer the roasted potatoes to a serving bowl, drizzle the melted butter mixture on top and toss to coat.
  • Serve warm, garnished with more parmesan cheese and parsley if liked.

Notes

Wash the potatoes first: You don't need to peel baby potatoes because the skin is so thin but it's a good idea to scrub them with a vegetable brush first.
Shred your own cheese: Freshly grated parmesan cheese is so much more delicious than the pre-shredded kind.
Serve them hot: These delicious crispy roasted parmesan potatoes are best served hot. If you aren't quite ready to serve them, keep them warm in the oven until you are.
