Ground Turkey Sweet Potato Skillet

This ground turkey sweet potato skillet is a one-pan dinner packed with lean protein, veggies and melty cheese—easy, hearty and delicious!

Ingredients

  • 1 Pound ground turkey
  • 1 Tablespoon coconut oil
  • 2 sweet potatoes peeled and diced
  • 1 Teaspoon salt
  • ¼ Teaspoon black peppercorns cracked
  • 3 Cloves garlic minced
  • 1 shallot sliced
  • 1 lime
  • 2 bell peppers diced
  • ½ Cup gouda cheese shredded
  • 2 Cups kale shredded

Instructions

  • Heat a large skillet over medium heat. Add coconut oil and swirl to coat the pan.
  • Next, add the ground turkey. Season with a pinch each of salt and pepper. Break apart and cook until browned, about 5 minutes.
  • Add the diced sweet potatoes, shallots, minced garlic, and bell pepper. Stir to combine.
  • Juice the lime into the pan, then cover and cook for 10 minutes.
  • Remove the cover and stir. Add the kale and cheese, and cook for 10 more minutes. Serve hot.

Notes

Dice sweet potatoes evenly: Smaller, uniform pieces cook more quickly and evenly.
Add kale at the end: It wilts fast—adding it last keeps it from overcooking.
Cover the skillet to steam: Helps the sweet potatoes soften faster without drying out.
Taste and season as you go: Adjust lime, salt and pepper to your preference.
